mojocoffee 誕生於 2003 年 10 月 30 日,由 Anastasia 與 Scott Pasuya於台中創立,是台灣早期投入精品咖啡烘焙與沖煮的重要咖啡館之一。多年來,以穩定而清晰的風味觀點、獨特的空間美學與對品質的高度要求,逐步建立起鮮明的風格,曾獲外媒評選為台灣最佳咖啡館,並兩度榮獲紅點設計大獎。

mojocoffee was founded on October 30, 2003, by Anastasia and Scott Pasuya in Taichung, becoming one of Taiwan's early pioneers in specialty coffee roasting and brewing. Over the years, we have established a distinctive identity through our consistent and clear flavor philosophy, unique spatial aesthetics, and unwavering commitment to quality. We have been recognized by international media as one of Taiwan's best coffee shops and have received the Red Dot Design Award twice.

Coffee Philosophy

我們始終相信,一杯好的咖啡,應該由咖啡種子本身的風味與甘甜出發,而非以苦澀為主導。這份甘甜與層次,來自產地農友與處理廠在栽植與處理上的細緻付出,也仰賴我們親至產區的選豆眼光、嚴謹的採購把關、烘焙師對火候與節奏的掌握,以及咖啡師在萃取時對細節的尊重。從杯測、烘焙到沖煮,每一個環節,都是為了讓梅納反應與焦糖化所孕育出的美好風味,能夠準確而溫和地呈現在杯中。

We firmly believe that good coffee should be defined by the natural flavors and sweetness inherent in the coffee beans themselves, never by bitterness. This sweetness and complexity arise from the meticulous cultivation and processing by farmers and mills at origin, our discerning selection of beans through direct visits to production regions, rigorous quality control in sourcing, the roaster's mastery of heat and timing, and the barista's respect for every detail during extraction. From cupping to roasting to brewing, every step is dedicated to presenting the beautiful flavors born of Maillard reactions and caramelization—accurately and gently expressed in each cup.

Taiwan Coffee Promotion

近年來,mojocoffee 亦深度投入台灣咖啡的推廣,與各地鄉鎮的農友合作,參與國產咖啡風味的建立與討論,成為台灣咖啡產業中持續耕耘的一份力量。

In recent years, mojocoffee has deeply committed to promoting Taiwanese coffee. We collaborate with farmers across various townships, participating in the development and discussion of domestic coffee flavors, becoming a sustained presence within Taiwan's coffee industry.

Space and Life

除了咖啡本身,我們同樣重視空間與人的關係。挑高的室內尺度、大片落地窗與開放式書架,讓城市的節奏在此稍作放慢。你可以帶著工作前來,也可以什麼都不做;可以獨自坐一個下午,或是在吧台與咖啡師聊幾句天。在這裡,咖啡與生活一樣,不需多作解釋,直接而真誠地存在著。

Beyond coffee itself, we equally value the relationship between space and people. High ceilings, expansive floor-to-ceiling windows, and open bookshelves allow the city's rhythm to slow down here. You can bring your work, or do nothing at all. You can sit alone for an afternoon, or chat with our baristas at the counter. Here, coffee and life are the same—no need for explanation, simply existing with directness and sincerity.
